Depends whether your partner is happy to drive. If not, that's your answer. If you have two drivers, then you do get more flexibility with two cars although you do get two sets of parking charges / tolls etc and need two "designated drivers" if you go out for a meal.
How likely is it that you will want to split into two parties going to different places? I would guess that you would need / want at least one 7 seater so that your family can fit in one car if you want to go out together. Hope you have a great holiday. EC |

Maybe 1 bus and 1 other car, so that for theme parks/group meals people can go altogether, but for other trips a smaller car?

We did it one year with the big van I did all the driving and hated it I’d go fo 2 SUVs if you can

Seven of us went. We went for a Town & Country for when we all wanted to travel together and an intermediate sedan for smaller groups.
