I've done that recipie I have a sneaking suspicion its the butter. Off to check the fat content of the aldi butter it always comes out worse with that, its lumpy no matter how long I blend or how soft the butter is x

This cake was that buttercream and I ended up having to go rippled finish as it wouldn't spread smooth.

This one was Swiss buttercream slightly better but still not perfect to spread. Too many bubbles.

You did a great job despite you not being happy with the texture!

Yes, definitely worth checking the fat content on the butter. It needs to be at least 82%. I’ve never used Aldi butter for buttercream, I always use either kerrigold or president. Costco also sometimes do a pack of 4 called Meadow Churn but I haven’t seen those in a while.

I tend to use sainsbury’s or Tesco bog standard unsalted. I find Aldi and Lidl too soft and they don’t hold. They claim to be butter but I’m convinced there’s some oil in there 🤔
They don’t have the right smell for butter IMO

If I’m making a very special cake I use Lescure butter, it’s a bit pricey but makes an incredible buttercream. I always beat the butter for at least 5 minutes before adding any sugar. I do use a kitchen aid though, I actually tried recently with a hand mixer and found the result to be quite different, so I think what you use to mix does effect the outcome!

Yes good point. Just been to tesco and must have looked like a nutter scrutinising the butter packs. To be fair the fat content was pretty much the same on all of them including aldi but the sat fat varies. I suspect there is oil churned with it.
