Simple vegetarian freezer meals
Hi all,
Struggling a bit with time during the week to cook. My toddler son wants ALL my attention and then on work days with childcare etc it is just such a rush so I’m looking at maybe meal prepping some freezer meals in the foil container things. Any ideas for simple and affordable ideas that freeze well and then can be cooked easily from frozen? We’re vegetarian fyi although I’m happy to adapt meat based meals, we eat all types of beans, lentils, soy, meat-replacements etc. NO nuts though as son is allergic. |

bolognese, chilli, curry, lasagna
make one massive panfull of them, then portion off into tubs, label and date, and then freeze, then just cook your pasta/rice/sides/etc from fresh *edit* curry guy base sauce is a good starting point greatcurryrecipes/2011/0...curry-gravy-2/ i make a batch of this, then whenever i use a tub to make actual curry, that curry then gets at least one tub for the freezer Edited at 09:07 AM. |

This butternut squash and chickpea curry is amazing. Everyone I have given the recipe to has loved it and it’s very easy to make. I always have a batch in the freezer then just defrost in the microwave. I’ve even had it as a topping to jacket potato before now.
