In need of dibb wisdom please flight change

My friend and I fly to Athens in June for another greek island hopping trip. Flights were booked with Ryanair on release leaving stansted at 9.15am. We have overnight hotel and parking booked at Stansted. Hotel in Athens booked for two nights on arrival. So Ryanair email today to notify us going out has been changed to 18.55. My friend rang and the person wasn't very helpful to be fair. What are the options in this situation? Can we ask to transfer to the Luton flight which is similar times to the original? If we cancel my friend is keen not to try booking another until she has the money back. Very understandable but how long would that take? I can cancel the Stansted hotel and pay a fee to do so. Do we just accept we've missed one night in Athens or go a night before and book somewhere to just get our head down before? I haven't had a flight change this long before so I'm not sure what the best option is. Any advice pls?

Ryanair are usually very good on live chat.

If the change is over three hours, Ryanair ask do you accept change or do you want to cancel flight. If you cancel flight, money is refunded onto your card in a couple of days

We would prefer to transfer to the Luton flight but not sure they will do it.
