Not big but its worth taking a electronic copy of many of the documents and emailing them to yourself. In particular the park tickets.

Some people take photos of their passport (photo page) and also park tickets. You can always delete them after the holiday.

We did this. Very handy to have all the barcodes and numbers in another place.

Have you contacted your bank to let you know you may be using your cards internationally?

Do you need any "add-ons" if you are planning on using your mobile phones?

I always let my bank and credit card companies know I am going in case I use my cards over there. Not sure whether this is essential, but I have always done it.

Have a fantastic holiday

I think the majority of card providers have it in their terms and conditions that you must let them know if you will be using your card abroad, where and how long for.

I forgot last time we were in the states and I had a transaction declined because I didn't let them know.

I had the complete opposite! Phoned to tell my c.c provider who said I needn't have bothered! I always do though, it puts my mind at rest.
