Not quite sure what to do on some of the evenings. Any suggestions?

Hi . You don’t say how many of you there are and what ages. Nor if you have been before ? Do you already have all those tickets as you are trying to do a heck of a lot ( more achievable if just a couple) . Where are you staying ?
Anyway some observations. You are ‘ wasting’ your first day imho . You will be up early with the time difference , so get yourself to a park , food shopping can be done after you tire at 2-3pm
You have three water park days in the middle really close to each other . Spread them out to use them as rest days . Maybe Sunday( dc) , Tuesday, Friday ( not weekends other then dc) .
You will need a full day at ioa so I wouldn’t try to leave early that day to go to a night show
I would try to plan something for your final morning

I agree that I'd do more the first day, also if you aren't staying on site at disney you will have to pay $22 to park so you might be better combining the evening shows with a day you are already at disney

We have never been before.
Staying offsite
Family of four Me, hubby, my son 21, daughter 18
Not driving using public transport. Staying on I Drive

I agree with the points raised by previous posts, and would definitely spread out my water park days. We use them as a day off from walking!
Regarding your question about what to do in the evenings, I don’t see you doing any of the firework displays in your plan only the rivers of LIght at AK. HEA at MK, and the 2 displays at HS and Epcot illuminations in my view are all worth seeing. Particularly if you’ve never been before.
If it was me I would allow for some later starts, get to parks mid afternoon and stay to watch these.
Good luck with fitting it all in, our plan for last October was amended several times before I was happy with it.
