Update for the OP. The George has now rebranded as an Intercontinental which we were please about as we had booked two nights here on points ages ago to go to the tattoo and fringe. We're just back after our two nights. It's not the hotel's fault that we got soaked every time we stepped out the door #Scottish Weather!

The George is still fab. Seems to have a high staff ratio and they are all super smiley and genuine. The Printing press restaurant is great and consistently good over the 4 or 5 times we've been there in the last couple of years. I'd recommend that you join IHG Intercontinental Ambassador programme. This costs $200 per year, but you do get a guaranteed room upgrade and a 4pm check out plus a £15 credit to your bill each stay. Also a BOGOF free night each year and bonus points each stay. I've been a member for a while and we have had great value from it.

I can thoroughly recommend Howies , one on Waterloo Place near The Apex. There's also a more informal one near the Lawnmarket.
We always book to eat there when we visit Edinburgh. The food does have a Scottish theme , not overly expensive , great atmosphere... we love it .
