Lunch suggestions
Looking for some nice lunch ideas.
We're both tired from running the pub (about day 60 without a day off 😱 and fed up living off ham sandwiches and pot noodles Something quick and easy Nothing pre-made from a supermarket I have access to a kitchen No fish or seafood (apart from tin tuna 😁 Not a boring old salad Any ideas?

I'm currently eating a princess salmon paste sandwich on brown bread (lovely).

Make up a Frittatta, put what ever veg you like in it and loads of eggs. Bake in the overn, you can eat it hot or cold, with bread, salad or on its own. Make a big one it can last for a couple of days. Really Tasty.
Recipe. Fry onion, pepper, courgette, mushrooms, tomatoes. (any veg you like) beat 10-12 eggs in a bowl. Salt and papper. (Or herbs) Get a big oven dish and put everything together and bake. Can put cheese on or even a tin of tuna in and it will taste delish. Has to go in oven for about 40-50 mins. Gas 4-5.

New potatoes halved, chopped hard boiled eggs, Garden peas, tin of tuna mix it all together with a few tablespoons of mayonnaise. Delicious freshly made while the potatoes and eggs are still warm, but almost as nice cold, can be kept in the fridge for a couple of days.

I currently have a 3 course lunch! Only takes 5 minutes to make and I'm really enjoying it:
Start with a bowl of soup (yes, even in this heat). Cauliflower is my current favourite. Then I have 4 crackers (round salt and pepper ones, not bog standard cream crackers) with butter and cheese. To finish I have a couple of peeled pears. Love pears, but don't particularly like the skin.
