The other option if you don't fancy a 5-6h drive is to fly, both Monterey and Burbank have airports.

The Drive as far as Santa Barbra is nice, after that the 101 gets very chocca as it goes into LA and its not a nice (though far from bad) drive.

We were disappointed with Pismo, it was nice to see for a few hours but other than that nothing special. As the PCH was closed when we were there we stayed at Atascedaro. We were in the Best Western which was close to lots if restaurants. One night we had a take out pizza and sat in a little park near the Town Hall watching the sun go down. We visited Morro bay and Cambria which were both much much nicer than Pismo IMO.

Drop down and go through Malibu and round to Santa Monica for a more relaxed and nicer drive from Santa Barbara,
