Easy prepare ahead, easy cook meals

We looking at going away in caravan for a week over Easter and looking at a few easy meals to take to cook that I could prepare ahead to take down with us.

That sounds lovely. Do you have an oven or will you be taking a slow cooker/ instant pot. I have loads of easy slow cooker recipes that you can prepare in advance.

I make a bolognese, so it just needs warming up and cook a pan of spaghetti with it. A chilli is another meal option which you could serve with nachos. Another idea could be to make a pie, flan or quiche. Casseroles or soups maybe. Make sure you have securely lidded containers for travelling though

I must admit I tend to eat out or have takeaways more when we go away but I’ve also cooked full meals in the caravan too.

I would certainly appreciate some slow cooker/ instant pot ideas for general day to day after a long day at work we love coming into a cooked meal.

We are in a cottage with family at Easter as well and hadn’t considered taking slow cooker but idea appeals to me now

We often camp and take pre-prepared meals with us, we take bolognese, curry, chilli, sausage casserole, (you can even take cooked rice, cook it and run it under cold water - keep cool till needed, then run boiling water over it), chicken fajita,

We in a caravan so have a kitchen, but cannot live on chips all week! We need to sort dinners for the dog too, so will do ours at same time! Hadnt thought of taking slow cooker, Definetly like some easy recipies!

Here are a couple that we do in our house in the slow cooker that are well received.

I love Fiesta Chicken-
Chicken breast or thigh fillets (it’s a personal choice)
Sliced onion
Tinned tomato’s
Tomato paste
Chicken jelly stock cube
Smoked paprika
Chilli powder
Cumin
Salt
Pepper
Put it all in the slow cooker and leave on low for 6-7 hours. You could also add tinned corn or chopped pepper about an hour before serving. The chicken will shred really easily. And you can use it in wraps, over rice or as a topping for nachos.

Sausage and Bean Casserole
Sausages (I like chicken ones)
Sliced onion
Tinned Butter Beans
Tinned tomato’s
Red wine stock cube
Tomato paste
Smoked paprika
Chilli flakes
Salt and pepper
Pop it all in the slow cooker on low for 6 hours and I serve this with crusty bread.

Chicken and sweet corn soup

Chicken (breast or thigh)
Chopped celery
Chopped onion
Chopped carrot
Mixed herbs
Garlic
Chicken stock approximately 2 litres (or more if you need it, depending on how many people you are serving)
Pop it all in the slow cooker on low for about six hours. Then shred the chicken and add a tin of corn and also a tin of creamed corn and fresh peas and leave for another half hour then serve.

Obviously you can also do chilli con carne, bolognese etc but it’s nice to mix it up a bit! Xx

So if you have a oven, I like to do a one pan meal. You pop a whole block of feta on a greased tray and then around it place sliced purple onion, cherry tomatoes, whole garlic cloves, chopped peppers, fresh asparagus and smallish cubes of sweet potato. Drizzle with olive oil and add a good shake of Italian herbs over the top and bake in the oven for 20ish minutes on approximately 170 deg c. You can serve this with steamed greens or a green salad.

Chicken with Halloumi and Lemon
Chicken (breast or thigh)
Block of halloumi sliced into about 2cm slices
A lemon
Sliced onion
Butter beans
Olive oil
Garlic cloves
Place everything except the lemon on the greased tray. Halve the lemon and liberally squeeze the juice over everything then slice the rest of the lemon and add to the tray. Drizzle with olive oil and then bake in the oven for 20-30 mins on about 160 deg c (or until your chicken is cooked through) then serve. Again, serve with a nice green salad.

There are lots of variations you can make to these recipes- adding or subtracting ingredients as you wish!
