I know what you mean, always looking for something different to throw in
This year we are doing evening shark fishing at Cape Canaveral.
It's an hours drive away.
Suitable for all ages

You don't say whether you have kids, but if you do you could try a sleepover at Busch Gardens. You get to sleep in Tiger Lodge, right next to the ...er... Tigers!

Front of the line access to the big rides, in the dark!, close up animal encounters and an early morning safari, before the park opens, to feed the giraffes - magical

You can only do this if you have children though

Definitely a 4night, or 7 night (3 night is too short) Disney Cruise from Port Canaveral - Disney with a whole new twist !
Book it direct or through a specialist US T/A.

Other cruise companies are available

We did a 3 night Celebration cruise last year and are doing a 4 night Royal Caribbean cruise from Miami this year - would love to do a Disney Cruise, but found them slightly expensive

My son did the Warbirds plane experience & said it was an adrenalin thrill like no other. Expensive though.
