Foolproof caramel shortcake recipe?

Has anyone got a tried and tested caramel shortcake/ millionaires shortcake recipe? I need one with firm caramel, mines a bit soft and cloudy when I make it, I want one that's firm and a nice dark brown colour

Thanks

Nigella Lawson's Roxanne's Millionaire Shortbread recipe is my usual one. The caramel is done in the microwave!

A big hit here!

This never fails.
50g caster sugar
125g butter
2 tbs Lyles Golden Syrup
Can condensed milk
Put all ingredients into non stick saucepan
Stir until sugar has dissolved
bring to boil slowly , then cook, stirring continuously with a silicon whisk for 5-7 minutes
Pour over shortbread base and chill.

I often make the caramel a day before and keep in the fridge but it can be harder to spread as it is firm but a tablespoon dipped in boiling water soon spreads it.

This is the best caramel I have ever made and I have tried a few...I work in a school and have helped in food tech many times with some horrific caramel recipes. enjoy

Sounds like the one to go with as I have also tried quite a few and they are never firm enough. I want it to hold up when sliced
Thanks
