Animal Kingdom best plan?

yup go for the EMH day at AK
we normally do that park in about 3/4 of a day and then hop over to epcot for the fireworks

make sure to get a fast pass (if you can) for the avatar ride

AK is a chilled out park not many big rides and it very easy to get lost in there too (i manage it every time)

great shows bugs life and lion king etc

if you go on the rapids ride you will get soaked (ponchotime)

i dont think spending 2 days at the park is worth it

I think youll struggle not duplicating rides over 2 days. Its an easy 1 day park.

Yes, the new Slinky coaster will be in Toy Story Land in Hollywood Studios (it's not open yet).

YorkshireT mentioned it because the opening of Toy Story Land might pull crowds away from Animal Kingdom and towards Hollywood Studios instead. So, after next summer, AK might not be quite as busy as it is now, meaning EMH at AK might be a bit better.
