I also use ground almonds rather than flour as im gluten free its also great with a good cherry preserve and the 70%choclate

That’s a great gf dessert Helen. Cooper’s best friend is gf and I am always looking for treats to make that he can have at our house. 😊

You can also make a version of this just
Making the topping bake it as instructions spread the jam over or omit let it coool and spread melted chocolate over it old fashioned as I am I stick glacé cherrys in tge coconut mixture as it comes out the oven if omitting the jam and just using the chocolate oh I serve it with the chocolate on the bottom for some reason if you want a nut gluten free very quick tray bake for school , the office etc
You can also use the topping mix like this
Using an small ice cream or cookie scoop place scoops on a try lined with parchment bake 7/8 mins allow to cool and dip in melted chocolate and set on parchment paper to set these go down well ina cellophane bag with a bit of ribbon on them at school fetes etc

Nigella’s Rice Crispy Treats

My son has friends coming over and one of them is gluten free. I decided to make some sweet treats that everyone can share. You can use regular coco pops if you are not gf.





I melted the chocolate in the mecrowwaveee 😆 and then added the butter and golden syrup.


Before adding the coco pops.

Pop it into a lined baking tin and refrigerate.

For the topping I melted more chocolate with coconut oil and then poured it over the top of the cooled coco pop mixture.


Once chilled then slice and eat. This was so good and made a nice change from marshmallow rice crispy treats.


This was super simple recipe and not too rich or heavy. 😊 xxx

Turkish Delight Slice

This is another super easy no bake slice! I did end up using two packs of biscuits as the butter/condensed mixture was so sticky.




I chopped the butter and 4 Turkish delights and placed them in a microwave dish to heat.


I then added the condensed milk to the melted mixture.


The crushed biscuits were then added to the mix.


Once combined, I then put it into a lined tray.


I melted the chocolate with some coconut oil and then poured it over the slice mixture before popping chopped up Turkish Delight pieces on top.



Chill for a couple of hours before slicing. This recipe was a hit in our house! 😍

Todays slice is just bits that I needed to use up, this is called #economygastronomy 😉



I used:
2 x packs of biscuits- I used hob nobs
100g butter melted
200g (half a tin) condensed milk
2 tablespoons golden syrup
1 block chocolate
1 tablespoon coconut oil

In a bowl add your condensed milk, melted butter and golden syrup and add the crushed biscuits.


Pop into a lined tin.


For the topping, melt your chocolate in the microwave with the coconut oil then pour over the cooled slice.



I have some Ghiradelli Caramel Sauce leftover from our Christmas trip so I decided to drizzle this over the top of the chocolate and then added the sprinkles.

Pop in the fridge until completely chilled before slicing.


This was absolutely delicious, I really liked the hob nob base! Happy Saturday. 😍
