I don't know the exact greens that goes into this salad, but there's a place I go to for salads fairly often that does basic greens then gives you a choice of toppings.

What I like getting usually ends up being this (+/- some ingredients here depending on what they have)
- leafy vegetables
- some pasta
- an egg (the ramen egg sort)
- cherry tomatoes
- black olives
- grapes
- nuts/seeds
- croutons
- sesame dressing

They also used to have smoked salmon as an optional topping but have taken it off their menu... but smoked salmon on top was lovely too!

You can have anything, we usually have cucumber, leaves and tomato. We then add sweetcorn, olives, red onion, spring onion, peppers, bacon bits and dried onions. (Not all just some) Sometimes chicken or tuna, prawns and I also make pasta salad, cold rice and potato salad
Now I want a salad, we have various dressings, thousand island is my fav

Here is one of our favourites

Fruity Rice Salad

100g Long Grain or Basmati Rice (approx)
1 Small Can Pineapple pieces in natural juice
1 Small Can Mandarin Orange Segments
½ a Cucumber
1 Red Apple
Mayonnaise (Hellmans or similar) to taste – at least 3 heaped tablespoons


Method

1 Boil the long grain rice as directed – rinse thoroughly in boiling water to remove excess starch, then rinse several times in cold water – leave to cool
2 Drain the pineapple pieces reserving the juice
3 Drain the mandarin orange segments – chop the larger segments in half
4 Slice the cucumber into approx ¾ inch slices then cube
5 Mix the pineapple juice with Mayonnaise
6 Chop the apple into chunks (similar size to cucumber and pineapple pieces)
7 Toss the apple pieces in the mayonnaise and pineapple juice mixture to prevent the apple going brown.
8 Add all the ingredients together in a large bowl – stirring gently to mix.
9 Cover with cling film and place the mixture in the refrigerator until well chilled.


Please note this is not an exact recipe you can adjust it according to your own taste. I sometimes add a few well rinsed sultanas as well. It is also great with some cubed/chunks of cooked chicken.

Jenny you’re post just reminded me of my mother’s carrot salad haven’t made it in a while it’s a nice alternative to coleslaw might just make some to go with the left over chicken from yesterday

I like spinach leaf salad, with strips of carrot, spring onion, cucumber, peppers, mushrooms, cashew nuts and chinese hoi sin sauce (tonights dinner). we have with chicken, or duck, or marinated pork, but could go with feta cheese.

It really is time I embraced a salad...

My go to easy salad to eat with a BBQ is:

Can of green lentils
Chopped beetroot (vacuum packed)
Spinach or rocket
Tomatoes or sun-dried tomato
Mustard/oil/vinegar dressing
Also nice with feta or hallumi

Baby mozzarellas, onions soaked in balsamic night before , cherry tomatoes and olive oil
Avocado sliced with lemon juice , olive oil , S and pepper
Carrot , apple grated with peanuts
Warm egg mayo
Bed of nice leaves
Chicken breast pan cooked in sweet chilie sauce or prawns

Actually a treat meal for us as I love all the above
