When we do water park days we always plan on the evening to do some shopping as they close earlier than the main parks.

Additionally some of the late park visit days we planned we did other things before even a water park then hotel, shower back out for 3 rides and fireworks.

We love the water parks, so for me, weather permitting, I'd pencil in a return trip there. You might also want a return trip to AK now though as well, with all the Pandora stuff to see and the new rides, and it's such a different experience seeing Pandora in the night than the day.

If doing all the parks we do
Mk 2 days
Epcot 1 day
HS 1 day
AK 1 day
Disney water park 1 day

We may then re visit another disney park we see how we feel

Universal & IOA 1 day each then a 3rd day doing both but just the rides we want to do again and do the HP train both ways.

I usually schedule our rest days as water park days, since you can do as little or as much as you like there, weather permitting. If you just want to go on the lazy river you can, if you want to go on all the slides you can, if you just want to stay on a lounger all day while other members of your party enjoy the park you can!

Discovery Cove is also an incredibly relaxing day, apart from making sure you make your Dolphin swim, if you have one, again you can do as much or as little as you like. Recommend arriving early for this, as the earlier you arrive the sooner you get your swim in. I think we got there for 8am and our swim was at 9.30, this meant we could relax more and weren’t clock watching.

Like you I’ve always planned in shopping days for us, for our normal 2 week stays these are day after arriving, for the items we didn’t take with us (shorts, t-shirts etc) and then the middle Saturday to stock up on things that need replacing at home (jeans, work tops, trainers etc.)
