Looking to plan our trip - do the evening Fireworks/Laser Shows take place every evening?

Sorry, if so which parks are they in and which days if not every day?

There are evening fireworks and shows in each of the Disney parks every night and you can check out the timings on any particular day by clicking on the park hours. As you will see, they are generally around 9pm in May which from your countdown, looks like when you are visiting.

Just to summarise what evening shows are listed on the park hours page for early May:

Magic Kingdom: Wishes every day around 9pm (the time of this could change).
Epcot: Illuminations every day at 9pm.
Hollywood Studios: Fantasmic every day at 9pm, Star Wars fireworks might also be on (still TBD).
Animal Kingdom: Rivers of Light every day at 9:15pm.
Universal Studios: Cinematic Spectacular most days at 9pm (probably).
