Complicated stuff...

If all 8 need to be in a car for 5 days out of 14, I would opt for 2 cars, with group 2 picking up the second car on arrival day and driving it to where you are staying. If you choose virgin atlantic car hire, ba, costco or alamo brits, you get one free additional driver on the booking anyway and it doesn't have to be a spouse. You can also add the name of the additional driver at a rental location near to where you are staying and/or return the first car when it's convenient to you, rather than going back to the airport.

Although it's for a different reason (cost!) we often split the car hire into 2 separate bookings. The quickest "swap" was at the Omni Championsgate where we swapped from Costco (Hertz) to Hertz direct. It took 10 minutes and we saved about £200 on the combined bookings, so worth it for us for an hour of holiday time.

Just to put your mind at rest there are no 1 way drop fees in Florida apart from Port Canaveral which was introduced not that long ago.
