Salmon recipes for tea today!

Any Salmon recipes, I have a big bag of salmon that needs cooking. My sister bought it in Jan for my veggie brother and never cooked it. She insisted that I took it and cooked it! It’s lying on the side defrosted while I think what to do with it! I don’t mind a bit of spice or a sauce, as long as I have the ingredients in the house, thanks x

Steam it, serve it with some rice, and do a spring onion, soy, ginger and rice wine vinegar dressing. One of my favs.

I marinate the salmon in sweet chilli sauce, soy sauce, honey and lemon juice then either bake in the oven or fry in the pan. Serve with tenderstem brocolli, green beans and wholegrain rice.

In one frying pan, pan fry the salmon fillets, in another, fry some garlic and ginger, then add soy sauce and some maple syrup, leave bubbling for a bit then pour over the salmon fillets whilst they finish cooking... that’s what we’ve just had tonight! Always a hit in this house!

ETA:-little tip-keep some fresh ginger in a ziplock bag in the freezer and grate straight from frozen, then you always have it to hand and no wastage!

Top with cream cheese mixed with lemon zest and herbs, then top with breadcrumbs and bake in the oven. Had it last night and it was lush!

This sounds good, will have to try it and a good tip for the ginger!

I usually marinade with soy sauce, chilli flakes, honey, then serve woth rice and veg!

Or, make a salmon thai red curry, easy peasey, just use tablespoon of red thai paste, an onion, a pepper, saute, add salmon, then coconut milk, and simmer gently for 20 minutes.

I ended up putting on jerk seasoning on the salmon, making some savoury rice and some lime and a little bit of Nando garlic sauce. I love these recipes and will refer back for next time, I didn’t have the ingredients to make any of these! It was nice anyway but anything is nice with nando sauce!

I make salmon balls - in the food processor put 2 slice of bread and process into crumbs. Add a half to 3/4 teaspoon of chinese five spice powder. Skin the uncooked salmon and cut into chunks. Add into the food processor. Process again. It should be wet enough to form into balls (smaller than golf balls). If not add some beaten egg to bring it together (not a whole egg - little by little). Fry until golden.

Make a sauce by frying some tomato puree for 30 seconds, add half a teaspoon of 5 spice and a tin of coconut milk. Mix and cook slowly.

Serve with rice and either peas or brocoli!
