You could go to Celebration, Winter Park (take the boat tour), Mount Dora or take an airboat ride.
There is so much to do, but it will depend on what kind of things they are hoping to see.

I love all of these ideas especially the winery! State parks would be lovely too: thank you!

No idea regarding flights.

But ideas what to do, winter park boat tour is fantastic for older people. Its leisurely and i think around $14 each. Take a hat if its sunny there is no shade. the The Charles Hosmer Morse Museum of American Art is also housed here well worth a visit.

Also winter gardens is great, nice slow paced area to go for a walk, or a bike ride, farmers market is near there also and they've a neat little place where the brewery is. Also a smaller shopping complex which is quieter than others.

Boggy creek airboat tour maybe? Book in advance using a coupon to save money, its a good drive out but its well worth it. Go early on a morning before it heats up and you will see more.

Depending on the time of year you go, maybe a baskatball game? Its a great experience and isnt just the game, there is a atmosphere etc, the pre game stuff. Same with the Orlando City football club, go early take part in the pre game activities.

Visit altamonte mall, further out than the florida mall or the mall at millenia, quieter and a good selection of shops.

Lake Eola farmers market

Old town for a car show.

Brewery tour? orlandobrewing/visit/free-tours/

Visit celebration, looks fantastic at christmas.

Agree your first travel day but let the inlaws make their own flight arrangements so that they go to NY on their own. Same with the parks. Give them a copy of your park itinerary and tell them that they can join you when they want to.
