Just book 1 day at epic and was wondering how to book the exact date you wish to go

If it is part of a multi day ticket you can not book a day you can visit any day during the validity period of your ticket. This is subject to park not hitting capacity, although they are monitoring ticket sales for certain dates to try and avoid that happening. Universal advise using the epic day early in your validity period in case at capacity. If staying onsite you get an hours early entry, if you go during this period you shouldn’t have an issue getting in.

You can buy single day dated tickets, you select the day you want when buying as these ticket are priced as date specific.

Have you bought a 1 day ticket just for Epic (only) or have you bought a multi-day ticket for all the Universal parks which includes 1 day at Epic?

If you've bought a 1 day ticket just for Epic then you would've had to select the date you want to visit when you bought the ticket. The ticket is date-based so you will have selected the date. Selecting that date automatically books that date for you.

If you've bought a multi-day ticket then you can't book the date you visit Epic Universe, as m2k00 says above. You can visit Epic on any single day during the validity period of your ticket, subject to the park not reaching capacity. For example, if you've bought 14 day Universal tickets that include 1 day at Epic then the ticket is valid for 15 days from the start date you selected when buying the ticket and you can visit Epic on any day within that 15 day period (you can visit the other parks on any of the other 14 days).

Bought the 14 day universal ticket with 1day at epic included

Can I upgrade to an annual pass just for universal parks without epic once there ?

In which case, you can't book the exact date. You just turn up at the park on whatever day you want to visit and get let in, assuming the park hasn't reached capacity. Same as with the other parks, just that the likelihood of Epic reaching capacity is slightly higher because it's new.

No one knows yet.

You may not be able to because, by using the ticket to visit Epic Universe, they may only allow you to upgrade to an annual pass that includes Epic Universe. And those annual passes aren't on sale yet.

I say that because those with the 3-park 14-day tickets who have used the ticket to visit Volcano Bay have not been allowed to upgrade their ticket to a 2-Park (US & IOA only) annual pass. They've had to upgrade to a 3-park annual pass. The same might happen with regards to Epic Universe.

But we don't know yet so it's all guesswork. You might be fine.
