If you are planning two weeks in the parks and staying on-site , when the free dining plan offer is on its a no brainer , although with Character dining you might want to look at the option of upgrading to table service depending on how many you plan on doing . That would probably be too much food though as you plan to only eat one big meal a day.
Most economic for us (2Adults 1 child) has always been Disney Moderate Hotel with free quick service dining plan , and then just one or two table service / character dining experiences. If you get it while the Gift card offer is on you can even use this to pay for the table service / character dining to further reduce your costs.
