Dinner wise, the Cali Grill is hard to beat but you might want to consider V & A as an option.
As for during the day, have you thought about hiring a boat?
We did it in November on Thanksgiving Day & it was great fun, we hired from the Poly so were able to go around Seven Seas Lagoon & over to Bay Lake.
Stayed out for about an hour but you can spend as long as you like, we opted for a ten seat sun seeker.

I've booked a surf lesson at Typhoon Lagoon for my friend's 50th, she's pantwettingly excited!

All about what you'd like, personally I'd pick a celebration fireworks cruise and dinner somewhere quiet!

For my 40th we did the boat which you get soft drinks and snacks, you can also pre-order a brithday coke on the lagoon to watch the Magic Kingdom fireworks, lovely evening you have a tour around the seven seas lagoon then position in front of the castle to watch the fireworks, we also got to see the electrical parade on the lagoon before going back to the marina. Really enjoyed it and have done it since.

Maybe treat your wife to some spa treatments at Grand Floridian then all meet for afternoon tea or something similar

This might be the dumbest question ever asked but is California Grill inside Disney and do you have to have paid for a park ticket to eat there?
Although we visit Florida every year we normally head straight down to the Gulf Coast, but this time we are having a couple of nights in Orlando and as it will be my 60th we are also looking at doing something special.

Cali Grill is a restaurant in Disneys contemporary hotel - walking distance to magic kingdom. You don’t need a park ticket and can see the fireworks from their roof area or inside the restaurant if you have a good table. You’d have to book 180 days in advance usually to get a decent time on the date you want but cancellations do come up too.

For something a little different I would suggest the Wild Africa Trek. It’s suitable for mixed ages and gives a great insight into the day to day running. Lunch is included as is a lovely steel water bottle. You can take pictures but a photo package is included in the price with some great animal pics. Great for making memories.
