We have flown into MCO and out of Tampa twice before and planning to do it again next year. It's easy to book online, this year we booked a package with BA with two different hotels and a car as well as the flights. Tampa is definitely much easier to navigate through than MCO. I would definitely recommend it if you're spending your final week at the beach (we did AMI one yr and st Petes beach this year). There's wasn't any difference in price for us (direct to/from Gatwick). Happy to help if you have any questions.

This is exactly what we want to do so thanks for this. We will most likely book a fly drive with BA - presumably there are no issues with picking up the car from MCO but returning it to Tampa?

The BA/Avis booking page offers the option of differing pick up and drop off points as you suspected.
