Me too. Got our Irish passports a few weeks ago so got this covered.

So do I have this right? Entering Europe in a couple of years there will be three lanes in arrivals - EU citizens, ETIAS holders, Schengen visa holders.

Coming back to the UK there'll be a UK citizens lane and to be honest we don't know what else yet. I guess we'll replicate with a UK visitors waiver for certain countries, and full visas for workers/other countries.

Get a grip..its £6/£7. You pay to go to the USA and India etc. It's the price of a pint in the airport. As for the EHIC, that doesn't bother me either. If you travel without travel insurance, that is ludicrous. You can get great deals with little excess.
