We stayed at Hotel 1110 in Monterey, it's a really quirky place not very impressive from the outside but amazing inside and the breakfast was fabulous.

We did this and it worked great and we didnt feel rushed to just keep driving rather than take in these places.
We are still trying to decide what is the best split so will definitely look at the driving distances and consider what you are suggesting. What put me onto 2 nights in SB & 2 nights in Monterey was the fact that someone said if you only spend one night you don't get to really explore that area... you end up checking in, having dinner, sleep, breakfast and check out.

It's all open for discussion so thank you very much for taking the time to respond with your suggestions... I think I have some research to do.

Monterey Hotel Plaza and Spa. A room with Ocean view. You can sit and watch the otters, kayakers etc.. from your room. Cant wait to go back.

With family rooms only seeming to be 2 double beds per room and expensive We are doing Airbnb in Monterey and Santa Barbara both 2 nights each. Thinking that our daughters won’t share beds without complaining,kids will be 18 and 16 so will have a room each plus also thinking about practical things like getting laundry done. We’re more apartment type of people.
