I recommend a book
The Hidden Magic Of Disney World by Susan Veness.
I read it and made notes in a small note book, so when I was in a certain shop or area I flicked through my book and found what I wanted easier. There is a bowl in the shop in China that staff members can make a tune on etc.
A really good read and it spices little things up.

I think you have the wrong one... it's not that much. It's the one that says it's from the Steve Barret book on the description. I really love it but then I love searching for Hidden Mickeys and I like the 'tick off the ones you've seen' element to it.

I would do some of the tours. There are lots I will be dragging DH in if the kids (ones an adult now!) ever stop wanting to come away with us. If you haven’t tried parasailing at the Contemporary that’s a fun time. I’d also like to eat/drink/chill in some of the lounges. The Nomad bar at AK for example. I’d like to check out the resort Spas as well. My kids recommend taking a Sea racer out but I’ve never done this myself. I also have a Fireworks Cruise on my bucket list. Happy planning 🙂

Tons of other stuff, I will come back later and post. But as others have mentioned the various tours are good if your budget will allow. They used to do a Segway tour around the outskirts of Animal Kingdom that took you to the now closed River country, not sure if it still runs.
Are you sure? Animal Kingdom and River Country are very far apart!
There is a Segway tour at Fort Wilderness though which is next to River Country. It's fun, but doesn't acknowledge RC as obviously Disney likes to pretend it doesn't exist.

You can also rent bikes at Fort Wilderness which is nice..a nice experience away from the craziness of the parks. I have also parasailed from the Coemporary and although expensive and short, it was a great experience.

Keys to the Kingdom Tour is brilliant if you haven't done it. At the start our guide took us to stand in the Square at rope drop and just watch and listen to the flood of people coming in. It was incredible!

Have you been to the crazy golf?

Also, we like walking round the Boardwalk and just taking it all in - you can rent Surrey bikes, or just stroll and watch the world go by.

A few times after crazy golf (I can't remember which one - so someone might help out?), we have walked over the road towards the Swan and Dolphin and you can get on the Boardwalk from there. We have also sometimes used the back entrance to Epcot from there and just had a stroll around one or two of the countries.

Gosh there is so much you will find if you do some research. Tours are good, going to the boardwalk, visiting some of the resorts, Epcot world show case is an entirely different place if you take your time to really discover each area. Also hidden Mickey hunting, trying new restaurants.
