We might have to do this as discovered my roasting tin not big enough.

It would be nice for a Christmas style photo but I'd end up carving before it gets to the table. At the moment I can only just manage to lift it without including a baking tray.

The Phil vickery turkey way is the choice of us for the last six or so years. Really missed it last year when we went to in-laws. It’s so moist and makes the best gravy, plus it cooks so quickly!

I brine mine for 24 hours before to add flavour and it helps to keep moist ( Google Nigella). I then totally cover so when it cooks it's steaming, for the last part I uncover so it Browns.

The best tip i ever had and still use it let the turkey rest for at least an hour, I usually do two hours it makes it really moist plus it leaves the oven free for cooking all the other stuff.

i have followed Nevin Maguires recipe, he is a very well known Irish chef. The crown is in the bottom of the fridge soaked in a bag of buttermilk and garlic with pepper salt oranges and rosemary... will update how it turns out

Turkey cooked well and very quickly.
Was nervous so did overcook it according to thermometer but it was still very tender. Slight 'gamey' taste which they said it would have.

I did get confused which was breast side up/down though 😂🙈



We didn't even make a dent in it though!

It looks lovely and I hope you enjoyed it.

I always buy a turkey crown as we don't like the legs, I put butter under the skin some seasoning on the skin and cover with streaky bacon make a loose parcel of foil then cook it slowly.

I forgot to take a picture after it was cooked though

We also brine ours with the Nigella brine and rub loads of butter under and over the skin.
Cook it covered and then remove the foil for the last bit.
Having said that, today I bought a crown for £4.25 Which will just be buttered and shoved in the oven!
