Rivers of Light (Animal Kingdom)
Tusker House (Buffet - character meal)
Tiffins (Table Service)

Fantasmic! (Hollywood Studios)
Hollywood & Vine (Buffet - character meal)
Mama Melrose (Table Service)
Brown Derby (Table Service)

Festival of Fantasy Parade (Magic Kingdom)
Tony's Town Square (Table Service)

I've booked Tusker House and Mama Melrose dining packages for this trip. We are on the Disney Dining Plan, which can be used for these packages.
We'd have to eat anyway and this way I can use a fastPass for something else.

FastPasses are also available for the above shows, plus the Illuminations fireworks at Epcot.
The only problem here is that you can't book more Fastpasses until you have used your original 3, and as the show will take you up to quite late, you may only be able to use your original 3 on those days.
As advised above, if you want to Fastpass a night show it might be worth doing on a shopping or waterpark day for this reason.
