Get silhouettes done in MK.
I have never done this in WDW but saw a video of Touring Plans where they had to get the best souvenir for (I believe) 20 dollars. I got very emotional as one of them got the silhouette done and I have one of me and my mum hanging in my hallway done at Disneyland in probably 1979/1980ish. I had no idea they still did them.
If I knew how I would upload a photo (do you have to be a passholder to upload photos?). Anyway, I really want to get them done of me and my daughters this summer.

Do a full tour on the monorails. Go from MK to Epcot and back again; then do the resort monorail and get off at each hotel and have a look round / a drink / snack. Some (if not all) of the hotels have a Hidden Mickey search quiz you can do, too.
The on site hotels also have “Movies Under The Stars” every evening.

Not sure if it still happens but at Casey's Corner on main street a pianist would come out and play on the outdoor piano. My 11 year old son who loves music was in his element watching this man play, and loved getting a chance to hit a key at the end.

I have a photo of it and it always takes me back to the magic of our very 1st trip. Sometimes its just the simple things that mean the most.

Love all of the suggestions above and

was going to add the following - until I saw they were posted already

Always check under the mat at the Muppets, just to see if someone has left the key to get in

Monorail hotel tour- into all the hotels on the MK loop

Pirates treasure hunt and Sorcerers in MK is a great find and packs in some great park time.

If you have a UK Ultimate ticket you get a free round of golf at Oak Trail - you don't have to be an expert, but it is a great way to say you have played golf at WDW. 9 holes and a walking course.

Flag drop at MK ( around 5pm) - the most spine tingling moment of respect for their flag. Well worth seeing and missed by so many who visit MK. Simply beautiful to watch and experience.

Breakfast/brunch/ food at the Patisserie at the very back of the France Pavilion in Epcot - reasonably priced and not always busy, a little hidden gem

Memory Maker "Magic shots " - know it sounds odd but certain photographers (usually when off tripod) have the ability to do some different pics - bit of a dying breed in the parks but some photographers can do some great things that make for a special memory in a photo.

Also make sure you get the Lantern photo of a night time in MK - outside the Rapunzel area between IASW and Columbia Harbour House
