Flown a few times and flying again next month. We’ve always booked direct on their website which gives you the option to book seats when you are booking your flights, or else afterwards via Manage Booking.
The Aer Lingus website has seating plans, and also info about inflight entertainment, food and drink etc.
Always had a good experience and flying direct from Dublin to MCO means US immigration pre-clearance before you fly so you land as a domestic passenger and just collect your luggage and go.

We are flying with Aer Lingus for the first time in August and have already booked our seats - we booked with them directly.

You can book seats as soon as you have your booking reference. Seat map will be online, if you want to se exactly which seats are free and which are paid do a dummy booking if you cannot see it in manage your booking. Did you book direct? If not you might need to call to get a seat booked.

Alcohol isn’t free on board. Download the app Aer Lingus play to get an idea of the entertainment on board and food is…airline food. Edible but nothing special.
