What to do about Terrible Wi-Fi @ Disney
Our plan doesn’t cover us for internet use in the US, but expect we’ll be needing our phones quite a bit in the Disney parks. Have read several people say the wifi has been terrible of late - seems that hasn’t changed since we were last there!
What do people intend to do?

3 PAYG sims still include Go Roam in their data packs. Been with 3 for years but I'd just downgraded from contract to PAYG last year as didn't need the contract after going WFH, so no change for me.
I think the wifi problem is capacity, there's just too many people using it. Not helped by the ones who live stream from the parks. I didn't notice many issues when I was there just after Thanksgiving. Some days I used similar amounts to when I'm at home, so must've been connected to the wifi the vast majority of the time. Though last went in 2019 to be honest it was fine for the app in my opinion. Yes you could not live stream and the photos tended not to upload to the cloud etc but for the app I have only ever used wifi . Depends on what you want I guess and what suits your requirements

We are here at the moment and Disney wi-fi has been hit or miss.
We downloaded a Airalo esim on both of our phones and have had no problems since.

What provider are you with?If you call them and explain they may be able to help temporarily upgrade you? O2 were great and I just upgraded for one month on one trip to include unlimited international data. It was really reasonable. There was also a bolt on option but again, that's O2.
