Low carbing in the USA- Jul22-Live - 22nights - Complete

Meant to start this earlier but it’s not really gone to plan.

I wrote this in my notes 😂Can’t wait to return but I’m not convinced I’m quite as excited as usual with so many airport issues being reported and us flying BA via Heathrow. 😂

Funny because yesterday at 5pm BA cancelled our 7.40am Heathrow flight leaving us too late to get to London any other way. After a bit of scrambling online to check out options and some amazing advice from dibbers we managed to get on live chat and booked from Manchester with Aer Lingus still flying today.

We originally had some Disney time booked as part of this trip but shelved that for the time being.

We are staying for 22 nights at a mixture of Universal resorts - Endless Summer Dockside, Cabana Bay and Portofino.

We were lucky enough to get a wee weeks trip in February which gave us a wee reminder about what it was that we’d missed so much about Orlando holidays. Last food report is here -


Usual Cast



Me: 49- loves all things Orlando and chief planner. Did eat pretty much everything other than eggs but at the start of December I was diagnosed as diabetic. My eyesight had been a bit dodgy and an optician appointment flagged up that it didn’t seem like general deterioration and told me to arrange blood tests. Right enough, diabetes was diagnosed later that week.

Since then I’ve switched my diet completely to low carb and low sugar. Found it hard and a massive learning curve at the start but it’s working really well for me. Lost 37lb, firmly in the healthy BMI and for the first time in my life a size 10. But the main benefit is my Blood sugars are significantly lower, off medication and my vision has vastly improved.

Dh; 50, missing carbs so I imagine he’ll be making the most of the Florida food. Hates tomatoes, beans and mushrooms. Fairly chilled but can always be persuaded for a universal or Disney trip.

Ds: 14, loves all food, can eat for Scotland. He is firmly established in his teenage years, adores Universal but high praise probably comes in the form of a grunt or a meh 😂 and a quick glance up from his phone.

So second Orlando trip as a low carb and low sugar 🤯 the week in February prepared me well and I learned a lot, however, 22 nights might be a bit of a challenge and I doubt I’ll always get it right.

I have lists and research as long as my arm so I won’t starve or just be eating Caesar salad every meal 😂.

Don’t fear and stop reading though, the other 2 will be indulging as per usual. I’m pretty sure DH can’t wait not to pretend he enjoys all my low carb meals 😂 and eat as he pleases for over 3 weeks.

I’ve made some dining reservations at Universal but they are not set in stone.

Have an amazing time - so looking forward to hearing all about it. Fabulous work on the weight loss and blood sugars. I hope you have lots of lovely food (you did so well in Feb!) and I imagine the odd treat shouldn't matter too much.

I hope your journey is smooth from now on.

I'm looking forward to this! Thankfully, my low carb diet can be more flexible at the moment as I'm doing it to help pcos and pre diabetes but I always feel unwell after too many carbs so it will be nice to see if there are ways that I can still follow it - mostly.

So glad you are on your way! Yesterday sounded a little stressful... Loved your Feb TR and looking forward to following this one... We will hopefully be arriving in Orlando at the end of your TR so this will definitely get the excitement building whilst I try not to worry about all the things that could go wrong!
