Soup ideas

I’m trying to stick to a gluten and dairy free diet along with lean meat/fish.

Struggling with lunch ideas and the soups I’ve made have not been particularly nice.

To make matters worse I’m to avoid nightshade veggies.

This week I’ve added pulses to one I made and that is not helping my stomach.

Any suggestions for tasty healthy soup that won’t have me bloated and dashing for the loo.

I tend to use a slow cooker for this

i make cauliflower soup from an americas test kitchen recipe

i usually make a massive panful using 2-3 cauliflowers, then portion into food tubs (putting some of the buttered florets in on top) for the freezer.

then, when i want one, i microwave the tub for ~5 mins, then decant into a pan and finish heating on the hob

i also do the same with french onion soup. make a huge batch, portion and freeze.

i dont do the bread/crouton/cheese thing though, just the soup with maybe a crust of bread to dunk in at the end - i eat these regularly on 5:2 diet days

An asian broth is a good choice for you limited diet. Have a look at zero noodles - a plant based product that you can use instead of noodles/pasta, especially nice in a soup.

Found a tin of chestnuts in the cupboard last week nearing end date so made a batch of carrot and chestnut and mushroom and chestnut - both turned out really nicely. Another of our favourites is carrot and orange or tomato and orange. Not a great fan of cream or milk in soups so all our varieties are dairy free.
