Yep you're right, but can only see one on return. So 2 flights going out and only one back showing as an option 14 days later. Does that mean the other MCO to MAN is sold out or is there only one flight?

Also TC appear to be sold out on 7 Nov and TUI don't fly on 24/10 or back on 7/11

Virgin know there is very limited supply hence silly prices

If you can fly from Glasgow it's much cheaper. We've done this lots of times when Manchester has been too expensive and just stayed overnight at the airport the night before.

How do you get this plan up of days and flight prices? i am looking at flights but i will be willing to do any day that is cheaper?

Have you tried pricing it up as a package holiday? Sounds bizarre but some of the prices I’ve seen for flights on here are more than I’ve paid per person for flights, a condo and car hire with Virgin. Not sure how you would cancel the accommodation if you had privately booked somewhere but it’s worth a shot.
I have a feeling that they have preferred rates for people booking packages.

Have you tried searching virgin through sky scanner...seemed to bring up more options than on virgins page?

Wow prices are high aren't they. Push yours by 1 day and it drops to £788. Still a lot though.
Fly from LGW and its £672 for Econ and only £883 for PE
