Your itinerary looks perfect to me, but my priority would be the parks. You could lose a HKDL day if needs be, but I happily spent 2 days there. I would highly recommend 4 days at TDR though, both parks are huge, with tons of attractions and so amazing you will want all the time you can get.

looks great - for a disney trip - shanghai disney is also a single day park- BUT I'd happily spend two days there - plus there's there 'small' downtown area too. though there's only so much you can eat.
One bonus of shanghai Disneyland is they take credit/debit cards everywhere - unlike the rest of china where I had an almost 100% fail rate outside of hotels (2019)
cash only, and more annoyingly most places only take weChat pay or AliPay - and you can't use them with non china cards.
