Publix do very very good Subs - the Boars Head ultimate is delicious.
One full sub will def do between two people with some crisps etc.,

You can always buy sandwiches in the parks.

You can get good filling subs from Publix (as Alison wrote) or Walmarts, these tend to be better value for money that the ones you can buy from the themeparks. Cant remember if there is a subway on I drive as this maybe a closer option but if you can get to a supermarket then this is probably the best value option.

You can usually get sandwiches and snacks in 7 eleven or Walgreens I know they both have stores on I Drive. If you have a car stop off at Walmart on Turkey Lake Road. It will probably work out cheaper for you. If you have a fridge in your room you can buy cold meats and cheeses and make your own.

Best sandwiches IMO are from Panera Bread, there is one on Vineland Road between Premium Outlets and LBV area.

Publix and Panera Bread are our favourite places to get sandwiches from, although the turkey sandwiches from The Terrace at Seaworld take some beating

You also have to remember about packing an ice pack to keep the sandwiches cool as they will get hot if kept in a bag on your back all morning. One option is to get a locker for the day. I'd just get them in the park.

We didnt take packed lunches to the parks, we just ate from their selections - however we did eat a lot of subway sandwiches after the parks cos we found we weren't always hungry enough for a full meal.

I often choose the sandwich options in the parks.

Have had some really nice sandwiches. Ok so they are more expensive than Walmart/Publix etc, but personally I couldn't be bothered with going to the supermarket first thing in the morning, then carrying the sandwich (along with something to keep them cool) around the parks, to save a few dollars.
