I keep seeing this in coffee shops etc. What’s in it making it that colour ? why is it so popular ?

The reaction of acidic vinegar and buttermilk tends to better reveal the red anthocyanin in cocoa and keeps the cake moist, light, and fluffy. This natural tinting may have been the source for the name "red velvet", as well as "Devil's food" and similar names for chocolate cakes.

It is very tasty, that is why it is so popular.

As above, true red velvet will have vinegar and buttermilk in giving it that amazing taste. If it doesn’t have these in, it’s just chocolate cake dyed red.

Originally it had beetroot in it but now it tends to be food colouring.

Cochineal is a popular choice for a natural red colouring, which I believe is crushed bugs
