Boat from cabana bay

If you stay in cabana bay can you walk to sapphire falls to get the boat to city walk ?

Yes, we did this when we stayed at Cabana Bay. There's also a nice walking path which goes all the way from Cabana Bay to City Walk. Generally when going in early morning for early-access to the parks we walked as it wasn't too hot yet but when returning to the hotel we took the boat back to Saphire Falls.

We have Cabana Bay booked again for 5 nights in September.

Yes under normal circumstances. Currently, (and I know we can’t yet) as Sapphire Falls is closed the boat isn’t running that far.
Depending on what happens they may not open all the hotels up.
