Question "BIG" rides at Disney/Universal - which ones to choose?

I have a quandary. I am going to be travelling with two small kiddies and a husband with a back problem and therefore I can't really drag them around any big rides, but I've been reading about them all and would like to do just one (or two) over the fortnight!

I don't really like those ones that "churn" (side-to-side, up, down, left, right etc.) but I LOVE rollercoasters and I also like the look of the Tower of Terror . If you could choose your absolute BEST, what would they be?

Fantasy-Favourite Ride day eh?... I'd start at AK and do Everest, pop over to MGM and hit ToT and RnRC, take in Mission Space at Epcot before heading down I4 to Universal... studios first: Mummy, across to IOA and Hulk, Spiderman and Duelling Dragons.

That should keep me busy for a couple of hours!
