Question Universal Day Tickets?

Hi all
This is my first post!
We have booked Orlando May 2019 and I have been looking at tickets. We will be doing all Disney and Sea World/Busch Gardens but was wondering if it was worth paying for Universal as a one off or should we just pay the extra £400 for the 2 week ticket? We will have a 1 year old and not sure how much will be at Universal for her. We love Universal and have been before but not sure the extra £400 justifies it as we may only go to each park once (Universal main and Islands of Adventure).
Any tips on what would be best to do or ways around this? At the moment it looks like we pay the £400 for 2 weeks or pay on the gate for 1 days entry which will be around $100 each park I'm guessing.

A 2 Day Universal Base ticket cost £159.87 from orlandoattractions.com. You can't ride the Hogwarts Express or park hop with this ticket, but you can the leave the same park you are visiting and return later in the day. Link below.

A 2 Day Park to Park ticket cost £191.26 from the same site. You can ride the Hogwarts Express and park hop with this ticket. Link below.

Both tickets expire 7 days after first use so your 2 days would have to be in this period.

The cheapest that I can see the Universal 3 Park Explorer ticket that gives you 14 days unlimited admission into the 3 Universal parks is £220.46 from the same site as above. Link below.

You wouldn't have to pay for your daughter as you don't start paying until children are 3 years old.

Also have a look on undercovertourist as they sell 1 day tickets compared to orlandoattractions.com who start at 2 day tickets.
