Maybe Kings Cross Station (9 3/4 platform) and then Coal Drops Yard which is nearby for something to eat.
Totally understand your views on Borough market, although there are still some good restaurants there, the market is very touristy now. Have you been to Maltby Street food market? Itís not far from Tower Bridge so you could walk through Bermondsey from the Shard to the market. Hope you have a good day whatever you decide.

Just thought to mention too... you can get 2 for 1 entry to a lot of the attractions if you have come by rail by booking online then showing your tickets. A lot of the Greenwich attractions are included.

The rooftop bar at One New Change has excellent views, particularly of St Pauls', no booking required just to go up to the roof and only a few stories up in case anyone doesn't love heights.
For food I often go to Seven Dials market, it can be a bit of a crush but they have a variety of different cuisines available, similar to the food hall in a mall. Never had a disappointing meal there yet

Madison? The food is amazing in there and in summer weekends they have outdoor music on.

Just looked, and yes, it's the Madison, although we didn't eat there, just enjoyed the views across London
