I use the recipe from the Hummingbird Bakery which come out nice and chewy and very easy to bake. Again always tray bake and they freeze well - dh needed some for a work event and I had to make them ahead of time due to other pressures. He took them in frozen and cut them once he got to work and they lasted no time at all.
