Does anyone know if it's the next 7 days from first day a FP is booked, or 7 days with FPs booked?
I.e. if I book first FP on the 1st do I get FPs to the 7th, or if I only booked them for every other day would I get to book to the 14th?

any 7, doesn't have to be consecutive. Once you've used them on your 1st day you can book another days worth.

I think it just depends who you talk to on the Disney costs. Universal appear to have pretty standard rates but Disney doesn't. It should be less than another 14 day ticket (or at least everything I've read says this) so I'm using that price (approx $555 as my bench mark when I do this in September. As I know I'm going another time in the year I know that's what I'll be paying out anyway so if I can get cheaper than that I'll be happy
