This may seem a bit off topic and not everyone will agree but would he like to shoot a gun? There are some very reasonable and safe places where you can try a range of guns. My DH and DS really enjoyed doing something they couldn't do over here when we were there. We found a good indoor range not one of these outdoor places in the dessert where people are given huge guns and no instruction! Just a suggestion as others have arrange that kind of thing. Not everyone's cup of tea but it's something he couldn't do here.
We loved "O" so another vote for that if you are looking at shows.
Dependent on how much you want to spend you can do a helicopter ride over the strip with champagne. 🍾

Stratosphere does a tasting menu which looks delish. My hubby is not into fish though
