If you haven't been before then

Museo Nacional del Prado
Museo Nacional Centro de Arte Reina Sofía (Picasso's Guernica a must see)
Food or Tapas Walking Tour or eat down Calle Cava Baja in La Latina area
Chocolatería San Ginés - for chocolate and churros (in the early hours or for breakfast )
Museum of Ham (I joke not - good for a wine and ham sandwich)
Mercado San Miguel (more food)
Retiro Park on a Sunday
Segway tour
Generally walking around the city if the weather is kind.
Plaza Mayor for an expensive coffee/wine and people watching

You'll notice a theme of food and wine going there

The Madrid Metro can be useful and I can recommend a trip to Toldeo or Aranjuez if you want to get out of Madrid as it is only about half an hour on the train.

Agree, it was lovely there.

I still dream of the Pedro Ximenez sherry we had in the market. It was like velvet.

We did a flamenco show and dinner - good value with very nice food and the dancing was really impressive.
