Across to the Universe - *complete* February 2022

So pretty much exactly 2 years from our last trip we were back to Universal for a week on site.

4 nights booked at Hard Rock


3 nights at Sapphire Falls which was new for us.

Annual passes to be reactivated, and other than a bit of shopping no other plans except Universal.

Dh, Ds (14) and me.



We’d had a few holidays cancelled over the covid time and just kept booking them for the next school holidays. I have to say at Christmas we’d all firmly decided that we weren’t going to be going in February, then restrictions changed, our feelings changed and the week before we needed to cancel we decided to stick with our plans in the hope that it might actually happen.

Another spanner in the works was being diagnosed diabetic at the start of December and switching to a completely low carb way of eating and I was a bit nervous of how that would work on holiday.

Anyway we got there and if you’d like to read about how it was you’re in the right place.

Lovely to see another trip report from you - looking forward to reading all about your adventures.

Your diagnosis must have been a bit of a shock - have you been unwell prior to diagnosis? Going low carb on holiday must have been challenging. I've tried going low carb myself (just to lose some weight ) but found quite tricky as I do not eat meat. How low have you gone, carb wise? I know it works wonders for your blood sugars.

Tbh I was just a bit not right, thought it might have been my age. Only now that I feel better do I realise how rubbish I was feeling.

My vision was the big thing, it had gotten really bad and it was the optician who’d advised I get checked out at the doctors.

Low carb must be difficult with no meat as so many veggies and fruit are actually high in carbs. Do you eat fish and seafood? I aim around 30-50g a day but I didn’t count on holiday. I don’t think I could get under 20g to do Keto though unless I really had to. I’ve done well but it’s been quite tricky, lost 23lb and brought my sugars down from 91 to 46 and allowed to stop the medication. It’s all been worth it.

That's fantastic, well done! You must be feeling so much better - and the weight loss must feel like an added bonus
Good spot from your optician, glad you got checked out and are now doing so well with low carb.

Thanks. It’s great although I’m finding the new shape is taking a bit of getting used to.

Low carb would be tricky just with fish, I feel like I have a set list of veg that I live on but that’s not too bad with meat, fish and seafood. Who’d have thought I’d ever enjoy Brussels sprouts😂
