Absolutely not! Doves farm gluten free flour is what I use... for simple sponge you should use the "weigh 3 eggs" sponge recipe, I also use lactose free butter, and a good helping of vanilla! It always looks like the eggs will curdle it but once flour is added it comes together, perfectly light, soft, delicious sponge, every time!

Home made gluten free is so easy! I use doves farm flour, and the "weigh 3 eggs" recipe. Perfect every time.
Gluten free mixtures are always a little wet compared to the others and if I am using lactose free butter, they eggs look like they could curdle, but once flour is added, it comes together.

For chocolate sponge, swap out 50g of flour for cocoa powder. I make a chocolate cake with whipped up lactose free cream (I add cocoa powder and icing sugar to the cream to make it chocolate cream) and just layer it all.
I have yet to hear a bad word about ANY of my gf baking!

i am almost always underwhelmed, and even disappointed by most sponge cakes, cupcakes or red velvet cakes.

give me a good brownie, cheesecake or carrot cake any time

Any tips much appreciated as I’ve yet to master a decent replica of non gluten free cake. Don’t get me wrong everything’s been passable if more crumbly than I’d like but no comparison to non gf

My favourites are
Red velvet
Salted caramel
Lemon
But I rarely have them as gf options are severely limited it’s usually bog standard choc cake or Victoria sandwich. M&S do a pretty decent coffee & walnut cake but it’s rarely available in my local.

I agree entirely.
GF cakes are very short in texture so need additional ingredients to make the texture more appealing.
Do you like coconut? I have a really good coconut cake recipe. I top it with lime cream cheese frosting
