Quick, easy & yummy

I also do a warm Jamaican triffle

Jamaican ginger cake chopped up - I sone times soak it with a little Malibu
Tinned or fresh pineapple
Custard
Then make a meringue topping & bake in the oven until golden - it’s a firm family favourite

Wow Vanillapod they look incredible.

At Easter I made a lovely peach and amaretti trifle from a recipe on BBC Good Food.

I am going to make the Jubilee Trifle, put am going to buy the lemon curd, and have a packet of lemon jelly to hand, just incase.

On the recipe under Jemma’s tips, you can basically make an assembly version. She does say make the Swiss roll but M&S used to do a lemon roll so that could be an alternative.

I couldn't buy lemon curd in Tesco yesterday so if you see it grab it.

The good thing about trifles is that you can, basically, wing it. You could still do your own version of the Jubilee trifle with bought ingredients. Swiss rolls are lovely, but you could always use Madeira cake, tinned mandarins and lemon jelly? Have fun, with way x
