If you want to upgrade or downgrade your resort after the offer ends then the dining plan will go up or down with you according to what the new resort qualified for on the day you booked. I believe you would also get the $200 gift card if you were to book a value now and upgrade to a moderate or deluxe after the gift card has dropped in value because, again, the gift card was part of the overall offer you locked in on the day you booked.
In terms of fees: if the total amount of your booking goes up with an amendement then they waive the fee, whereas if the total amount stays the same or decreases they will charge you a £50/€65 amendment fee.
If you're unsure of your dates you could book for one person now and add other people to the room when you change your dates, provided the extra ticket cost is more than the potential decrease in the cost of your resort. That way the total cost will go up and you won't have to pay the fee. When you add someone more than 56 days before arrival you will have to pay a £50/€65 deposit per person when you make the amendment. The rest of the increase will be added to your balance. If you add someone within 56 days before arrival then you'll have to pay the cost of the increase right away, as your final balance would already have to be paid.
It's difficult for us to commit to dates this far in advance due to work, so we book what we think we can do for one person and change it as needed later.
The bit about pricing on the day you booked is crucial. This also means that if you make an amendment and prices are lower then, then you would still pay the higher price. This happened last year when resort prices per night were lower with the free nights offer than with free dining. You lock in the terms and prices of the day you booked. See more...

That's great, thanks for the info. I'm not too fussed about the price, just wanted to know if there was any room for manouvre if we couldn't sort the flights for those dates etc.
